    I received the June Newsletter from Chef Knives To Go and saw the new HH line for Konosuke. This is Konosuke's Swedish Stainless that has been hardened to HRC61. Just curious if anyone here has tried one yet and how they compare to the HD line in regards to edge retention and how easy they are to sharpen.

    The main difference now is the HH is fully stainless and the HD is semi stainless. They both sharpen up similarly. I think most of you guys would be hard pressed to feel the difference using the two knives other than the HD will show some patina. Hardening the HH line really improved them as would be expected.

    No I have not tested the new HH.... which also reminds me; I have a new magnetic strip arriving today or tomorrow that needs filling.

    You might as well add your ZDP-189 to the comparison too.

    Ok, I have just finished sharpening the 150mm HH Kono with a 12 degree relief and 17 degree micro bevel finished with the Jnat Ozuku Asagi spritzed with 1ยต Mono diamond spray.

    It was a total breeze.

    IMHO (not scientific testing and all that, just my perception based on feedback & sound from the stones - Chosera lineup), I am of the opinion that the HD is slightly harder to grind....???

    Both appeared to reach much 'o much the same level of sharpness.

    ....but that might be because my HD is a 240mm gyuto....????

    Would be nice to hear from others doing similar....

    Bring the ZDP-189 into the equation....you kidding me, ZDP-189 is way harder than the HD & HH combined - also I reckon it takes a better edge.

    Thanks for the great testing and report

    After hearing this, as I close my next escrow, I will be getting a 240mm HH Gyuto : )
