thanks for all the comments guys.

To know where to put the pin you just make a mental note where the tang sits in the stag, also measure how long the tang is after the last leather. I don't glue it all up at once. I glued all the leathers and spacers then set them in a clamp. then I went back, once that was dry, and cleaned the epoxy off and then set the stag. then i drill according to the measurements and peen the pin over. Let me know if there is anything else I can help you with.
