Hello, I'm new to knives and just got tired of my Mora 2000 knife that i use while fishing (mostly freshwater). I constantly lose grip of it and i need to sharpen it all the time. Im looking for a new folding knife as backup or maybe to replace my Mora 2000. I'm looking for a knife with good grip, and that wont rust easily. It would also be a huge plus if you can take it apart to clean it, i always clean my knife after every fishing trip.

Any reason you want a folder? Nothing is easier to clean than a fixed blade!
And I'm sure you could find one with a more positive grip. The stainless Frosts Mora Clipper is fantastic...I can't imagine a more "grippy" handle, and sharpening it is a breeze.
I want a folding blade because its easier to just have in my pocket if i want to go for a quick fishing trip without all my gear. I dont think Mora Clipper is and option for me, its too big and clumsy, i could go with a fixed blade thats pretty small, i only need a knife with a blade around 8-10cm (3-4inch). I have been looking at some Spyderco but dont know if you can take them apart or if its easy to clean them. Forgot to mention that it can cost around 100$.
A Spyderco is always a good choice...you really don't need to take them apart to clean them...just clean them the way you would a fixed blade...the water won't hurt the insides of the knife.
I prefer to leave a dedicated knife in the tackle box for fishing. Yeah I clean it best I can, but this isn't a knife I'm going to carry in my tuxedo at a wedding or anything, so why worry about it smelling like sugar and spice and everything nice?
You have a point there, but i usually like to keep my knives spotless when im not using them. I will also use it when im not fishing and sometimes go for spontaneous fishing trips on my way home from work or when im going somewhere else. Always keep my ultralight fishingrod and tacklebox in my car
Here is what Spyderco says about cleaning their knives...

Maybe somebody will come by with a suggestion for a folder that is easy to disassemble and reassemble...but I don't know of any.
Have you thought about a small fixed blade knife? Something like a AG Russell Woodswalker or one of the little Bark Rivers, like a Little Creek?
I would suggest something from the Spyderco Salt series. It will NOT rust.
