Does anyone have an opinion on the Tanaka Damascus? I'm thinking of picking one up for the wife but will probably use it. We have some Shuns, i just want to make sure that these will at least be a step up.

these are MANY steps up. if you're worried because Takeshi offers them at such a low price you can goto JWW and buy the exact same knife for almost 2x as much EE also carries Tanaka's fancier knives for $400+ at a smaller size.

The one I was thinking of getting is actually a V10 core with stainless damascus cladding. Which I guess is why I was worried it might be a bit redundant with the Shun.

I don't think these are stainless. Based on the sellers description these are YASUKI Blue Steel, clad with the V10 Stainless Steel.

Are you thinking of a Guytou or a Yanagi? All the Tanaka Yanagis appear to be Blue Steel and the Guytous are only 190mm long, that's just over 7 inches.

Tanaka use 3 steel, Blue #2, VG10, and Ginsanko.

his blue #2 is around 64ish HRC, and VG10/Ginsan are about 61-62. they are all great steel and great knives.
