these are a bit thicker than his normal IP series. it seems that murray and i have this kind of relationship where i ALWAYS order something that he usually doesn't make and he ALWAYS makes something different than what i wanted.
ummm... where to start...
well, we'll start from the begining. i ordered two knives from him. both kurouchi made from the steel he found in his backyard. one is a 9sun wa-gyuto with rosewood octagonal handle, 3mm at the spine. second was 8sun backyard steel kurouchi chukabocho with ebony octagonal handle, also 3mm at the spine. what i ended up with was IPNB series kurouchi knives with full tang.
the reason i asked for thicker knives is because of the weight. they're heavier than my other knives, and the reason i wanted this is because of my tendonitis. too much speed chopping : P
anyways, they rock. one of the first days i experienced zero pain while cutting. i loved it. the weight was just fine. he made them full tang for the reason of balance. i didn't fully explain why i wanted rattail tangs, but oh well. i cleaned a whole salmon, chopped a bunch of stuff and worked on the line with the gyuto. i didn't sharpen it before i used it, but it has retained a lot of the original sharpness. i usually test sharpness both with finger feel and paper slicing. i don't "slice" paper, i push straight down. all in all, i would say that after about 5 hours of cutting, it's retained 95% of original sharpness. even cutting through fish head and bones.
it's a great knife that i WANT to use everyday. i love this knife.
