    yeah, i just got these in this morning. they rock. it's not exactly what i asked for, but hey, it's alright. i wanted traditional handles, but oh well.

    ummm... yeah. these are different from other knives he usually make. note the color and swirl in the kurouchi finish. it's quite a different texture, too. i kinda like it. i remember him telling me about the metal he cladded these with a while back. some people might remember me talking about it. he said that it was "interesting", and it really is. it's really neat. i'll talk more about it later.

    the knives are:

    "Murray Carter 9sun Garden Steel Kurouchi Aogami steel IPNB Gyuto"

    and

    "Murray Carter 8sun Garden Steel Kurouchi Aogami steel IPNB Chukabocho"

    yup. i'll use one of them tonight and write a review later : )

    these are a bit thicker than his normal IP series. it seems that murray and i have this kind of relationship where i ALWAYS order something that he usually doesn't make and he ALWAYS makes something different than what i wanted.

    ummm... where to start...

    well, we'll start from the begining. i ordered two knives from him. both kurouchi made from the steel he found in his backyard. one is a 9sun wa-gyuto with rosewood octagonal handle, 3mm at the spine. second was 8sun backyard steel kurouchi chukabocho with ebony octagonal handle, also 3mm at the spine. what i ended up with was IPNB series kurouchi knives with full tang.

    the reason i asked for thicker knives is because of the weight. they're heavier than my other knives, and the reason i wanted this is because of my tendonitis. too much speed chopping : P

    anyways, they rock. one of the first days i experienced zero pain while cutting. i loved it. the weight was just fine. he made them full tang for the reason of balance. i didn't fully explain why i wanted rattail tangs, but oh well. i cleaned a whole salmon, chopped a bunch of stuff and worked on the line with the gyuto. i didn't sharpen it before i used it, but it has retained a lot of the original sharpness. i usually test sharpness both with finger feel and paper slicing. i don't "slice" paper, i push straight down. all in all, i would say that after about 5 hours of cutting, it's retained 95% of original sharpness. even cutting through fish head and bones.

    it's a great knife that i WANT to use everyday. i love this knife.

    9sun at 3mm spine is a hell of a knife.

    yeah, i was working on the gyuto last night. i spent quite some time on it, but i've got the face side close to flat.

    this is one of the things i hate about carter's knives; the bevels are a pain to flatten.

    the miroshi i have took me close to FOREVER to shine up. but that one has more dramatic grinds, so it was a little harder to do.

    those going to the get together will get to see it and use it. it's a really great knife to use. i love the weight of it.

    curtis...looking good....i would assume since everybody on the west coast wil get to see and use it you will shortly be shipping those two to the east coast for us to try.....if you wan't i'll take care of them while they're out here....they can sleep with my other carters so they'll be in familiar territory.....ryan

    hehe, thanks guys.

    almost all the knives i still have are pretty unique. all three of the carters i still have are pretty much the only ones that exist (so far). the unground miroshi is still my most treasured knife.

    yeah, the two suminigashi (damascus) yoshikanes are pretty crazy cool. that shigeki's cousin i have is pretty rare.

    the moritaka cleaver is different from the other ones here. although the spine is 5mm thick, the metal behind the edge is about as thick as ken's. it's a very steep grind. i like it.

    what can i say... i'm a sucker for rare and 'different' things. XD
