Actually I have a fondness for my Ken Onion knife because it was one the knives that started me down this Japanese knife path. My first Japanese knife was an Aritsugu Yanagiba I bought at the Tokyo fish market a few years ago. At the time I thought it was cool but did not really appreciate what it was. A couple of years ago while visiting a cooking store I was impressed with how sharp the Ken Onion knife was so I bought it. The more I used it the more curious I became of other knives mainly Japanese, which is how I ended up here. Today I use it less but it is still in the block for now.

The handle finish is okay at best but the blade is amazing, I love this knife, certainly one of my favorites at the moment.

All the people I've asked so far have said the same thing. I heard that Fred From FF really liked his and he knows good knives. So it must be good. I think I could fix the handle thing.

I'm thinking the blade is a lot like the Rosseli knives being tool steel.

Just got these back from, Daniel at The Epicurean Edge. He replaced the handle on my Murray Carter SFGZ - 5.7 sun Funayuki-bocho with ebony 8 sided, it was his suggestion to go with the light colored marbled buffalo ferrule. I think it looks and feels great, very happy with the result

He also sharpened and restored the broken tip on the Aritsugu Yanagiba 270mm.

I like the reverse look of that light ferrule and dark handle. Very nice, Landshark.

How do you feel about your Aritsugu? What grade is it? Is it partly machine done like a Masamoto KK series or is it honkasumi?

Honestly I do not remember the grade, it was some where in the low to middle of what was being offered at the time. I bought it at their shop in the Tokyo fish market many years ago before I really appreciated the difference in quality of the various knives being made. It has been my go-to sashimi knife for quite a while, it cuts very well. Soon after I had bought it some one in the family put in the wrong slot, (i.e. too short) in the knife block, damaging the original tip on the granite counter below the block. It feels good to have it back in tip top shape.

Whoa! Three bada$$ knives if I ever saw them. Great pics too.

As much of a cleaver lover as I am, I can't take my eyes of that Gleistain garasuki. It is just plain awesome

So what do you think of that #7? I even had a little bit of a learning curve when I got mine. I really love using it. It's very different from any other knife you'll use and a lot of fun once you get the hang of it.

I've been wanting to get that Garasuki for some time now but wanted the one without the cullens. I was looking at the sole knife too but the Glestain one. New Mizuno Tanrenjyo Ao Hagane Deluxe Series (Blue Steel No.1 Series) Yanagiba 270mm just arrived today
It is taller and thinner than my Aritsugu Blue Steel Yanagiba 270mm 33.34mm to 31.7mm at the hell and 3.34 to 4.12 at the spine. It also feels slightly heavier. Very nicely finished knife

On the sole knives, how flexible are they and how slippery are the handles? I know more than a few people who are on the hunt for a high end replacement of their Euro styled fillet knives (for both kitchen and field work) and I'm thinking these would fill the ticket. Your thoughts?

There is flex in the blade but with backbone not wimpy at all. The small profile makes it very agile to work with and the handle is just like any other western style handle. I do not think I would every find it particularly slippery in use but honestly if I was cleaning some albacore on the back of a pitching boat, I would feel better using my 10in Forschner Fibrox Breaking knife. The Blazen knife is more of a kitchen fillet knife than a field one.

I'm still not sure what to think of the Suisin. I always liked the shape of it, but if I have a knife of that size, I always think I want to feel that I have something in my hand. It just looks too thin and too light for me. But I'm sure it performs great.

BTW, do you happen to you if that snakewood is stabilized?

it is slightly concave, the back profiling starts higher and very gradually cuts into the back of the front edge; if that makes any sense
